Work Experiences & Community Leadership:

  • Twenty fiver years of experience working and consulting with athletes, coaches and food industry leaders across the nation.
  • Hired by Nebraska athletics in '82 as a freshmen in college, was the strength coach for baseball, softball, volleyball and assisted with football and was in charge of body composition assessment.
  • Graduated from Nebraska in '87. Founded the Lincoln Ice Skating Ass. to promote development of an ice arena in Lincoln NE (joint effort with figure and hockey).
  • Hired by Nebraska Ast. AD/Former Head Strength Coach '87-'90 to run his private coaching consulting firm formerly known as Body Enterprises designing weight rooms, programs and nutrition plans for coaches across the country.
  • Hired away to Wisconsin '90 ­ '94 where Ellis played a dual role initially as strength and nutrition, which became full time nutrition. Started a multi-university purchasing cooperative now called Sports Alliance www.sports-alliance.com.
  • Hired back to Nebraska in '94 as Director of Performance Nutrition. Founded the Lincoln Ice Hockey Association (USA Hockey affiliated youth hockey league).
  • Resumed graduate studies, completed R.D. rotations and certification in '99/'00 and will be done with M.S. Honors in Nutrition '02.
  • Specializing in feeding and hydration interventions during two a day practices to minimize health risks to the athletes as well as bowl preparation to peak for conference and national championship campaigns. Involved with multiple bowl victories starting with the '94 Rose Bowl, '95 Orange Bowl, '96 Fiesta Bowl and '97 Orange Bowl, '98 Orange Bowl, '00 Fiesta Bowl, '01 Alamo Bowl three of which were National Championship football season.
  • In addition to working with football Ellis has coordinated a nutrition support service staff for all 750+ athletes (24 sports) in the University of Nebraska athletic department. This includes: team education, shopping trips, menu writing, quality assurance of training table, travel meals, body composition and eating disorder assessment, counseling and supplement dispensing programs.
  • Out of demand for Ellis services he leaves the University of Nebraska Athletic Department in July '01 to liberate more time for research, projecting and consulting to athletics and food industry. Ellis' consulting corporation is called Sports Alliance.
